Thanksgiving Prep Tips

:

1. If you have a frozen bird, make sure you take it out of the freezer in time. Also, it can take a LONG time to cook. Have you ever seen Eat Pray Love, “the TURKEY?!”

2. I am on team spatchcock (which means that you take the back bone out of the turkey. There are two reasons to do this: it cooks faster + the skin gets crispy AF.

3. Cook as MANY things as you can ahead of time. Examples: blanch the greens beans, make the mashed potatoes, sauté or roast any veggies. Think of ways to free up your TIME + your stove + your SANITY. This is why I created an air fryer recipe this week!

4. Assign people SPECIFIC things to bring to help lighten to load. Example: instead of saying bring dessert ask them to bring a pie or a fruit platter.

5. Don’t forget clean up and household supplies like garbage bags, dish soap, rags or paper towels (you can also ask people to bring those items).

Air Fried Delicata Squash

You can make this in an air fryer or in the oven. I give directions for both. I love leaving the seeds in, they have the best crunch!

Ingredients:

1 Delicata Squash, sliced in ½ in rounds, leave skin on and seeds in.

Oil will depend on the recipe you use (you can use avocado or olive oil)

1 tablespoon Everything Bagel Spice

Air Fryer Directions

  1. Put the Delicata Squash in the air fryer. Drizzle with 1 teaspoon of oil and 1 tablespoon of Everything Bagel Spice and fry for 30-35 minutes, until the seeds are golden and it is cooked through.

Oven Directions

  1. Preheat the oven to 400°F.

  2. Put the Delicata Squash on a rimmed baking sheet with parchment paper. Drizzle with 1 tablespoon of olive oil and ½ tsp of salt, 1/8 tsp fresh ground pepper and bake for 30-35 minutes, until the seeds are golden and it is cooked through.

Chef Carla Notes:

  1. It’s easiest to cut the Delicata squash is a serrated knife.
