Recipe: Brown Rice Krispie Freezer Treats
I used to make a version of this Rice Krispie freezer treat recipe when my kiddos were babies. Freezer treats are my jam because they are always there when you need them. I make this with almond butter because I am allergic to peanuts but any nut or seed butter will work.
The chia seeds are part of the “glue” that keeps these together, you can try without but they will be more crumbly. You can also play with the honey ratio and use maple syrup or agave instead. Feel free to play with mix-ins. My kiddos love chocolate chips, in the photo below I used dried cherries. You could also add other nuts, seeds, or dried fruits, and spices like cinnamon.
These are great eaten straight out of the freezer. If you like them at room temperature you can let them sit on the counter for 10-20 minutes.

Instructions
In a medium bowl add the oats, rice crispies, hemp seeds, chia seeds, vanilla, and salt and mix.
Place the honey and almond butter in a small sauce pan and heat on medium heat until just melted for about 1 minute (no bubbles). You can also place in a heat-proof bowl in the microwave for 30-60 seconds.
Mix in the almond butter and honey mixture to the oats, rice crispies, hemp seeds, chia seeds, vanilla, and salt. Add in the add-ins like chocolate chips. Once incorporated, place in a parchment-lined 13 by 9 inch pan and smooth out with a rubber spatula.
Place the entire pan into the freezer to let set for at least two hours or overnight. Cut into squares and store in an airtight container in the freezer up to one month. Let them come to room temperature for 10-20 minutes or eat cold as a delicious frozen treat.
Chef Carla Notes:
- You can find chocolate chips with little or no sugar. You can also find 100% chocolate bars.
- Using parchment paper helps keep down the mess. You can also place directly in a grease pan as well.
This is the perfect drink for a hot summer day. If you are in the north east, like me you know these days are numbered, the leaves are already falling! It’s inspired by the Venezuelan drink, Tizana, which is made with chopped fruit and grenadine and can be spiked.
