Since my daughter Marcella started school we have been donating her birthday vs. giving goodie bags as a treat. It’s a beautiful way to celebrate her special day and to give back. This year, for her 7th birthday, we are going a little bigger with Cookies for Kid’s Cancer and she is so excited!

Instructions For Patties:
Put all the ingredients in a food processor and process for about one minute until it starts to come together and pull away from the sides.
Form into little balls (about 1 tablespoon each) and then press into a patty shape.
Dip each patty into the chocolate sauce with a fork and tap off the excess chocolate. This takes practice, and they don’t have to be perfect to be delicious! You can dip them more than once and then place them in the fridge or freezer for up to one hour.
To decorate them, you can take the fork and dip it in the chocolate sauce, drizzle them with chocolate, and place them back in the fridge or freezer for another hour.
Store in the freezer, as the coconut oil will melt at room temperature.
Instructions For Chocolate Magic Shell:
Melt the chocolate, coconut oil, and salt together. You can do this in a small saucepan (be careful to not burn). You can also heat in the microwave.
If you choose this method, cook for 30-seconds and then stir and heat at 10-second increments until melted, stirring each time until melted.
Chef Carla Notes:
The refreshing mint and the chocolate shell of these Peppermint Patties are delicious all year. For a faster treat, you can roll these into balls, drizzle them with the chocolate sauce, and pop them in the fridge. If you're looking for a more meditative cooking project, I encourage you to form them into patties and dip them in the chocolate. Use the extra Chocolate Magic Shell for any frozen treat. I recommend dipping a frozen banana in it or drizzling it over ice cream.
This is the perfect drink for a hot summer day. If you are in the north east, like me you know these days are numbered, the leaves are already falling! It’s inspired by the Venezuelan drink, Tizana, which is made with chopped fruit and grenadine and can be spiked.
