Avocado Board + 5 Salad Dressings to Kickstart Meal Prepping
I am doing a fun project on Instagram. The 99 Days of Summer! My first day was an Avocado Board. This is just in time for the 4th of July!! You need this for your next BBQ or dinner party!! It can serve as an appetizer (with tortillas chips) or as I like it an accompaniment to grilled veggies and or meats.
What’s on this board: avocados, kimchi, oranges + more. I wrote up some ideas in a recipe format for you.

Pantry Items to Stock:
- Extra-Virgin Olive Oil – My preferred olive oil flavor profile for dressings is buttery or grassy; some olive oils can have really spicy notes, which will overpower and alter the flavor of your dressing. Some brands I love are Frankies 457 Spuntino Extra-Virgin Olive Oil, Costco’s Kirkland Signature Organic Extra-Virgin Olive Oil and Whole Foods 365 Extra-Virgin Olive Oil.
- Sherry Vinegar – this vinegar has a serious acidic bite—and that’s a good thing! I use a splash straight up on my salads with a drizzle of olive oil, salt, and pepper and in dressings to add an extra pop of flavor.
- Salt – I love cooking with Himalayan pink sea salt. Kosher salt and sea salt also work well in these recipes. What won’t work is anything labeled plain or iodized salt.
- Black Pepper – freshly ground, all the way. Invest in a pepper grinder and buy quality whole black peppercorns from brands like Simply Organic or Whole Foods 365. Trader Joe’s also sells black peppercorns with a built-in grinder.
Kitchen Equipment and Tools:
- Bowl – a medium-size metal bowl is best. I place a damp tea towel under the bowl to anchor it while whisking. You can also use one with a rubberized bottom.
- Whisk – any whisk will work for these recipes.
- Liquid Measuring Cup – to measure things like olive oil, tahini, lemon juice, etc. Not sure what this is?
- Blender or Food Processor – If a recipe says to use a blender or food processor, use it! It makes for a smooth, well-incorporated dressing. I have a Vitamix but any blender will work. Any food processor will work; I use a small one that I used to use for making baby food.
