Cooking Hack: Perfect Fluffy AF Quinoa
I found a tip years ago on Food 52 to use less water than most packages suggestion and to put a towel between the put and a lid after the quinoa cooks to absorb moisture. It’s the only way to make quinoa, in my opinion.
I get a lot of questions about soaking + AC vinegar. That is to help with absorption of nutrients. All quinoa must be rinsed (even if it says pre-rinsed). A fine mesh strainer is your friend, you can order one in the shop

Instructions:
1. Rise and soak the quinoa with 1 tsp. apple cider vinegar and enough water to cover for at least 30 min.
2. Rinse and drain with a fine mesh strainer.
3. Put the quinoa in a pot with the filtered water.
4. Bring to a boil and then cover. Cook for 13-15 min on medium low.
5. Take off stove and place on a heat proof surface.
6. Take lid off and place a clean towel between the lid and pot. Let it absorb the moisture for 15 min.
7. Take lid + towel off, fluff w a fork and enjoy!
Storage: Keep up to five days in the fridge.
This is the perfect drink for a hot summer day. If you are in the north east, like me you know these days are numbered, the leaves are already falling! It’s inspired by the Venezuelan drink, Tizana, which is made with chopped fruit and grenadine and can be spiked.
